Healthy Spaghetti Pasta Salad
Have you ever had classic spaghetti salad? It’s basically an Italian pasta salad but made with spaghetti noodles. Well, when I used Palmini noodles, I took this classic recipe and made it ket0-friendly!
This pasta salad is super easy to customize. The only meat I used is some pepperoni slices, but you can definitely add your favorite protein. I think it would taste delicious with some shrimp or chicken. You could also add some bacon or other types of Italian cured meat (like salami).
Easy Keto Summer Dinners
I love making dinners that don’t require any cooking. If you want to make this salad the main course, just add some shredded rotisserie chicken or some canned chicken.
I like to keep this salad as a side dish. Make some oven-baked chicken thighs as the main course. Then, serve some low-carb cheesy asparagus with it and you have a filling summertime meal.

I love using this recipe on those busy weekdays when I just don’t feel like cooking. Since the noodles come in a can, you don’t have to boil them! Just rinse them off and mix everything together.
I used the angel hair pasta. I love the shape and texture of these noodles and how it combines with the veggies and pepperoni.
What’s In Spaghetti Salad
Most people will typically use “anti pasto” ingredients in their spaghetti salad. This includes things like olives, cucumbers, and tomatoes. I used those ingredients, along with some sliced red onions.
Always use fresh ingredients. Don’t use canned tomatoes! Fresh vegetables have the best taste and crunch in a pasta salad.
This spaghetti salad will taste amazing with some bacon-wrapped shrimp tossed on top too! Be creative and have fun with this recipe. Top it with some pepper jack or mozzarella cheese. It’s really easy to change and make it taste different each time.
Low Carb Pasta Salad With Italian Dressing
I included my homemade low-carb Italian dressing recipe in the printable recipe card at the bottom of this post. Save it – it has so many different uses. In fact, you might want to make a big batch. You can use it for marinades or as a topping for all sorts of different salads.
Homemade Low Carb Italian Dressing
I love this dressing! It is both tangy and slightly sweet without any sugar. The combination of red wine vinegar, lemon juice, and Italian seasonings is perfect.
If you don’t have red wine vinegar, apple cider vinegar will work in its place. You can use jarred lemon juice too. I prefer fresh-squeezed lemon juice, but the jarred stuff tastes pretty close to the same.
I used olive oil, but you can use avocado oil instead – it will have the same taste.
How To Store Italian Dressing
The best way to store homemade oil and vinegar dressings is in a sealed mason jar. The oil and vinegar will separate, so seal the lid tightly and give it a shake before you drizzle it on your salad.
It will stay fresh in the refrigerator for about a month.
