I ordered some spores a little while back and its taking forever for them to arrive. I made some brf cakes and some jars of rye so they would be ready to go when the spores got here. I was almost positive on the day they would be here so the night before I PC all the jars. I haven't opened the PC yet but the spores still aren't here yet.
So, when they do come, are these jars ruined now because they've been sitting there for 3 days now? Can I just apply heat and double cook, or should they be ok still?

you could Possibly add some water to the rye jars, after thorough inspection, and re-PC them to make sure there sterile. But i dont mess with BRF so no idea.

Make sure to check for what everyone calls "cowb webs"

The jars are fine if you've left them in the PC and they're still covered with foil. The jars should be okay for awhile, but I probably wouldn't go much more than a week. Sterility is not so much of an issue as moisture loss, but since they're still in the PC and covered, they should be just fine.

If you're that worried about it just make a new batch and start over. Wasted time, but little impact financially.

the jars should be fine i have serialized jars and let them sit for
a week and had no problems. just leave them in the pc until your
ready to use them.

i have jars sitting around for up to 3 weeks with no contam. if i know i won't be using right away i just have the rubber rings down and let it form a vacuum when it cools, some of my lids have holes so no vacuum there. i just place inside a gallon freezer bag--2 quart jars fit there with no problems. they are never contaminated--don't have to re-PC.
